ONE FRENCH RECIPE WITH JAM: LE GATEAU ROULE

I discovered many years ago a difference between Western countries and Asia: the breakfast. Here in the Philippines, it is one more time during the day the occasion to eat rice with fish or meat. In France bread, butter and jam is the rule. In England, the jam is often orange marmelade and you can have and idea of the english breakfast with our Pomelo orange jam of which sweet bitterness, wakes up the taste bud. Spread it on on a toasted slice of bread with or without butter and enjoy your breakfast!
According to dietician, breakfast is the most important meal of the day. It must bring liquid (orange juice, tea or coffee), vitamins (fruits), fibres (corn flakes) fast sugar to have immediately energy (jam) and slow sugar to not sleep at school or office at 11 am (bread or rice).


You know, jam is not only a gift for Xmas but also for birthday or when you visit a friend. It is a pleasure and a source of energy and vitamins for every day, at breakfast, when the kids come back from school, like chutney for sauce, with meat and fish or for cooking. I give you here an easy recipe we do very often, in a few minutes, at home.




The "gâteau roulé" (Cake rolls) is a very simple and delightful recipe. You need:


- 100 g of cake flour,
- 175 g of white sugar,
- 3 eggs,
- 1 tablespoon (15ml) rhum.


Mix the yolks with sugar until white colour and make a ribbon. Add the flour.
Whip the white until foamy. Mix with care to the first mixing and add the rhum.
Cover the large plate of the oven with aluminium foil. Butter it lightly.
Spread the mixing.
Cook 10 minutes at 140°C. Don't over bake or it will be difficult to roll!
After removing the cake from the oven, cover it rapidly with your favorite jam and roll the cake. Let cool.

The question of the week:


- Can I repack the bottle of jam?
Sorry, the answer is no. Because the jam is poured boiling in the jar that there is no contamination. When it is cold, the jam can be contaminated by micro-organisms and all your repacking bottle have big chance to be rapidly mouldy. If you heat again to repack without risk of contamination, the structure of the jam will be destroyed. Better to order the jam you like! Each bottle is 130 P only.

WELCOME TO LOLA'S GARDEN

First we have to thank our first customers and friends who encouraged us to develop our production. We have also to answer to your first questions:


- "How looks your jam?"

A simple design which need some improvements. We expect your remarks.

-"Do I have to buy 6 jars of the same flavour?"
No, the flavours can be mixed. The minimum is 6 bottles per delivery to limit the cost of transportation. Remember the delivery is free. As soon as possible we will have a place in town where you can buy per unit.

- "Why the name of Lola's garden instead of Mechelle or Daniel Jam?"
The garden of my Lola was full of juicy fruits, full of sun, full of colours, and she made jams full of perfumes, full of "good things" she said, and more of all, full of love. Probably it is because of this pleasant recollection, I want to share now with you the pleasure of this gift of the nature.


- "How much time I can keep a bottle of jam?"
When the jar is not opened
Our jam do not contain any chemical preservative and only the sugar, at the good concentration, guarantee a good conservation. One year is generally the "best use before" date. Until I have laboratory control test at one year, I prefer to give a delay of six months (SEE LABEL UNDER THE JAR).
As we do not use chemical colourant and anti-oxidant, it is possible you notice with the time and only with some fruits a light darkening (due to a limited oxidation). This is not dangerous and does not affect the taste of the jam.


At the opening
In very rare case, you can observe some moulds at the surface of the jam. There is no dangerous micro-organism in the jam and the mould should be discard with a spoon. We can also exchange the jar.


After opening
The jam must be refrigerated after opening because with the air and hot temperature, contaminations are possible. Anyway the taste is much better when the jam is kept in the fridge.

Dear Friends,

Since many months some friends of us regularly order our home-made jams. We decided to start, at small scale, a regular production of different flavours and you are one of the firsts informed. Our choice is to produce first grade extra jam made with local seasonal fruits and French taste ("pur fruits, pur sucre"). And we will soon propose you rare and original mixing of fruits. Of course, our jams are organic (natural farming constrains...) and without any chemical preservative or colourant.

Jam is one of the great culinary pleasure in this world. Made with the marvellous tropical fruits of the Philippines, jam gives you and your family immediate energy and good mood for all the day! And if the chocolate is the food of Gods (Theobroma cacao), jam is their food complement! More seriously, some fruits have recognized medicinal effects (Guyabano as cancer cell killer for example), tonic effect (Jackfruit pulp), without speaking of all the remarkable virtues of the Papaya or the coconut.
