STAR APPLE JAM LAUNCHING

The season of Star apple is back and it is the good occasion to prepare this very rare jam you can find only at Lola's Garden. 
Star apple tree or Caimito, member of the Sapotaceae family, is an wonderful tree which can reach 30m high, easy to recognize with its top dark shiny green leaves and gold color under. The fruit itself is gold for health: scientific studies shows it contains anti-oxidants and has hypotensive effect.


The jam has a dark pink color depending of the ratio between white and purple fruits. The taste is not so far from raspberry with a touch of tannins. During the cooking the latex disappears. The best is you taste it during our free tasting jam sessions in the different stores. As the star apple is very seasonal, we will not produce it during a long time, so try it rapidly!



The weekly recipe:
The star apple jam can be used in this classic recipe as topping for a rice pudding. To make a rice pudding you need:

  • 5 cups of milk
  • 200g of rice
  • 2 tablespoons vanilla sugar
  • 2 ounces store-bought meringues, crumbled
  • Star apple jam


Place the milk, rice and vanilla sugar in a deep saucepan. Bring to a medium simmer and put on the lid. Cook for half an hour, stirring occasionally, until the rice pudding is thick, creamy, oozy and moist. If it ends up being a bit too thick, you can thin it down by adding a little more milk.
To serve, divide the rice pudding between your bowls. Spoon over a big spoon of your star apple jam, then slowly swirl it in so it marbles and ripples through the rice pudding. Sprinkle over the meringue pieces. (adapted from foodnetwork.com)
